Barrel Aged Mixed Sour with Lillooet Plums

Tasting Notes: Susina is the Italian word for prunus domestica, a purple skinned plum with a greenish yellow flesh. We got hundreds of pounds of these plums, from a small farm in the Lillooet Valley, and carbonically macerated them in oak barrels. They were then co-fermented, in these barrels, with a light golden base beer. The result is a rich and complex fruited sour with hints of natural wine character. Enjoy aromas of lemon, strawberry and tropical fruit leading to flavours of plum, ripe red fruit, oak and a subtle funk with silky tannins a bright acidic finish.
